Oh no no no, this won't do. If we're gathering recipes, how about something that works?
2 cups (260g) chopped pecans (1 cup for cake, 1 cup for garnish. That's only if you'd like nuts, but these are optional.)*
1 and 1/2 cups (300g) packed brown sugar
1/2 cup (100g) granulated sugar
1 cup (240ml) vegetable oil
4 large eggs
3/4 cup (133g) smooth unsweetened applesauce
1 teaspoon pure vanilla extract
2 and 1/2 cups (312g) all-purpose flour (spoon & leveled)
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cup grated carrots
Add the spices to the flour in one bowl, combine the wet ingredients in a second bowl. Gently fold the wet ingredients into the dry in three increments. Gently, I say, because you want a dense, moist cake, darlings.
Pour into a cupcake tin or a cake pan. 350F. About 25 minutes for cupcakes, but upward to 40 minutes if baking cake layers. Frost however you like... but if you'd like it done right I have a cream cheese frosting:
8 ounces of cream cheese
1/4 cup softened butter
2 cups confectioner's sugar
1/4 cup of corn starch
2 spoonfuls of milk
Scant teaspoon of vanilla
Pinch of salt to taste
